Indian Style Macaroni and Cheese

Ingredients: 
Tomato sauce- 
1 tsp vegetable oil
1 tsp cumin seeds
2 tsp peeled, minced ginger
1 1/2 cups chopped onions
3 cups chopped tomatoes
salt to taste

sauce- 
2 tsp butter
3 tsp all purpose flour
1 cup milk (warmed)
1/2 cup cheddar cheese, shreded
1/2 tsp pepper
1 cup macaroni (cooked)


How to prepare Indian Style Macaroni and Cheese:
In a sauce pan, heat oil over medium heat. saute cumin, ginger and garlic for one minute.

add onions and cook until translucent.
add tomatoes and salt, mix well cook, covered, over medium low heat until tomatoes break down ( 5 to 7 minutes). Mash with the back of the spoon. set aside.


For the sauce, melt butter over medium flame. Remove from heat, and whisk in flour. add milk in a slow stream, whisking continuosly to make a smooth mixture. return to medium heat and cook, stirring continuosly, until sauce is thick- should take about 5 - 7 minutes.


stir in 1/4 cup cheese until melted, stir in pepper .
add tomato sauce and mix well.
stir in macaroni and cook until bubly and lightly brown.
serve hot.
