Mint (pudina) Rice

Ingredients Required -


2 cup - raw rice (soaked for about half hour and washed)
1 cup - mint puree (washed mint leaves, sorted in oil and blended into fine paste
1 cup - finely sliced onions
8-10 -finely chopped green chillies
1/2 inch - grated ginger
10 cloves - grated garlic
3 tsp - oil
Green peas
cinnamon
cloves
cardamom
salt to taste


How To Make Mint Rice -


Heat oil in a thick bottom pan / pressure cooker


Add cinnamon, cardamom, cloves. Sort it for about 30 seconds


Add onions, ginger, garlic and green chillies. Sort for about 1 minute until the onions are golden brown.


Now Add the mint puree and puree and sort for 30 seconds


Add the rice, salt and water and cook until the rice is completed cooked. 


Serve with raita of your choice.

Kheer ( Paradi Payasam )

Paradi looks just like rice grains. It is made out of steamed rice flour. This is used to make yummy kheer. This is a traditional sweet that is supposedely cooked during festivals like the Lakshmi pooja. Also the same recipe can be used to make shavige (vermicelli ) payasam. But make sure to fry the vermicelli in ghee until light brown.


Ingredients Required -

100 gm -Paradi.
1 cup - Sugar. (around 150 gm)
500 ml - milk.
4-5 - Dry Dates.
A fistful of dry grapes and cahew nuts fried in ghee.
1 tsp - ghee.

How to make Paradi Payasam - 

In a thick bottomed vessel add Paradi, milk, dates, sugar and bring it to boil. Once it comes to boil let it cook for about 8-10 minutes. Now add the ghee, dry grapes and cashew nuts and turn off the stove. Serve either hot or cold. 

p.s - In case the kheer thickens add a little warm milk to get it back into consistancy.

Vangi Bath

Ingredients Required -

2 - White Brinjal ( finely chopped , Soak it in water so that the color remains intact)
1 - Capsicum (finely chopped).
1/2 Cup - Fresh peas (boiled).
5-6 - Tomatoes.( finely chopped)
5 tsp - Vangi bath powder. ( recipe is given below or could use ready made powder's available in the market).
5 - 6 tsp - Cooking Oil.
5 -6 - curry leaves.
1/2 tsp - mustard seeds.
2 tsp - channa dal (bengal gram)
2 tsp - urad dal ( split black gram)
1/4 tsp - turmeric powder (haldi)
salt to taste.
2 cups - boiled rice.

How to make Vangi Bath -

Heat oil in pan.  Add mustard seeds and let them pop. Now a
dd channa dal, urad dal and the curry leaves. 

 Now add finely chopped Brinjal and allow it to cook. After the brinjal is about half cooked add capsicum to it and cook it for about 5-7 minutes. Now add tomatoes and peas and cook until the tomatoes have softened. Add Vangi bath powder, turmeric powder and salt and cook for about 5 minutes. Vangi bath paste is
 ready. Now mix it well with the boiled rice and serve hot.

How to make Vangi Bath powder -
Ingredients required-

50 gm -Guntur red chillies.
50 gm -byadgi red chillies.
100 gm - coriander seeds (dhaniya).
100 gm - channa dal(bengal gram).
100 gm - urad dal(black gram split).
5 gm - cinnamon.
5 gm - cloves.
10-12 - Curry leaves.
oil for frying.

Fry each of the ingredient separetly on low flame. Once cool, add everything into a mixer and grind it. Let it be coarse.
