Malai Kofta

Ingredients required -

FOR KOFTAS
4 - medium sized potatoes (boiled and mashed)
100 gm - grated Paneer
100 gm - cauliflower 
100 gm - fresh peas
100 gm - rougly grated carrots
2-3 - finely chopped green chillies 
10 - cashew nuts
20 - raisins (dry grapes)
1/4 cup - cornflour
salt to taste
oil for deep frying


FOR GRAVY
1 - onion roughly chopped
1tsp - grated ginger ( one could use ginger garlic paste)
1tsp - finely chopped garlic 
1tsp - coriander powder
1tsp - turmeric powder
1/2 cup - tomato puree ( blend 3 / 4 tomatoes)
2 - chopped green chillies
1tsp - red chilli powder
1tsp - garam masala
1/2 cup - fresh creme ( one could also use half litre milk)
3 tsp - oil

How to prepare Malai Kofta -

Mix mashed potatoes, paneer, green chillies, cauliflower, carrot, peas, corn flour and salt.


divide into 16 equal portions, stuff raisins and cashew nuts and shape them into balls.


Heat sufficient oil and deep fry the koftas until golden brown, drain into an absorbent paper and keep them warm.


For gravy, heat 3 tsp oil in a kadai and add onions, ginger, garlic, coriander powder, turmeric powder and salt and saute for about 5 minutes.


Add tomato puree and red chilli powder and saute on medium flame for about 8-10 minutes or until the oil begins to leave the masala


Add garam masala and  fresh creme or milk and simmer on low flame for about 10 - 12 minutes.


place the koftas in a serving dish and pour the hot gravy on top and serve.

channa Masala

Ingredients required -


1 cup - chopped Onion
1 cup - Tomato puree ( i prefer to just blend the ripe tomatoes)
200 gm - Soaked (over night ) and boiled channa (or chickpea)
4 tsp - channa masala powder
1 tsp - turmeric
2 tsp - lemon juice
4 tsp - cooking oil ( butter could be used)
coriander (for garnish)
salt to taste


How to make Channa Masala -


Heat the oil in the pan and fry the chopped onions until brown


Now add the tomato puree and mix well


Then add the channa masala and turmeric and salt and bring it to boil


Now add the boiled channa into it and let it cook for about 2 minutes


Once the required consistency is attained remove from heat


Add lemon juice and garnish with coriander

Gobi Masala

Ingredients Required - 

1 - Large gobi. (cut into large pieces and soaked in 
boiling water for about 10 minutes along with turmeric and 
salt)
2 tsp - Ginger garlic paste.
2 tsp - Garam masala.
2 tsp - red chilli powder.
2- 3 tsp - Lime juice.
6 - Green chillies.
1 cup - Chopped onion.
1 1/2 cup - Chopped tomatoes.
2 cloves - chopped garlic.



How to make Gobi Masala -

Mix ginger garlic paste, garam masala, lime juice, red chillie powder in a wide vessel.
Add Gobi pieces into it and mix well and let it soak (marinate) for about 10- 15 minutes.
In a kadai, heat oil and add chopped onions and chopped garlic and fry them. Add tomatoes and salt and let the tomatoes soften completely.
In a separate pan, heat about 5 -6 tsp oil and fry the marinated gobi.
Now add the fried gobi to the kadai and bring it to boil.

Paneer Butter Masala

Ingredients required -

250 gms - paneer[square pieces].
2 - onions, finely chopped.
2-3 - tomatoes, finely chopped.
3 tsp - ginger garlic paste.
2 tsp - red chillie powder.
2 tsp - coriander powder.
1 tsp - garam masala.
4 - 5 tsp - coriander leaves, finely chopped.
1/2 cup - cream.
3 tsp - oil.
salt to taste.

How to make Paneer Butter Masala -


Pour oil in a frying pan, fry the paneer pieces till light brown and keep aside.


heat oil, fry onions till golden brown. add ginger garlic paste, chillie p
owder, coriander powder. cook for 2 min and add tomatoes to it.fry it throughly and mash it with the back of the spoon.

add garam masala, salt, cream and mix well. let the ingredients come to boil. Now add paneer pieces to it and cook for about 3 - 5 min.

Garnish with coriander and serve.

Mooli Parata

Ingredients required -

For the filling -
 3-radish.
1/2 tsp -red chillie.
1/2 tsp - corainder powder.
2 - green chillies , finely chopped.
2 tsp - coriander leaves, finely chopped.
salt to taste.

For the dough -
2 cups - wheat flour.
salt to taste.
water as required.
oil for frying.

How to make Mooli Parata -


Add wheat flour, salt and water and kneed to stiff dough. cover and keep it aside.

peel and grate the radish, squeeze and drain all the water.
heat the pan, fry the radish until most of it's water content is gone. Add salt, red chillie powder, green chillies, corainder leaves, coriander powder and mis well. allow it to cool.

Take some dough and roll into small puri, put 2 tsp of stuffing and cover all the sides. roll again into a thick, round parata.
fry it on the tawa, add oil as required and roast it on both sides.
Tastes best with thick yoghurt(dahi).

Aloo matar

You need:
4-5 large ripened tomatoes
2 red potatoes( use boiling potatoes only )
1-2 fistfuls green peas -- you can use frozen / fresh / soaked and boiled dried peas
2 tbsp ginger garlic paste
1 tbsp coriander powder
1 tsp cumin powder
1 - 2 tsp red chilli powder
1 tsp garam masala( optional )
1/2 cup milk or cream
5 tbsp oil



How to prepare aloo matar:

Boil the potatoes peel the skin and chop them into 1 inch cubes.(keep aside)

Chop onions and tomatoes very finely and keep aside.


In a kadai / pan heat oil and add onions and ginger garlic paste ,keep stirring until the onions cooked to golden hue.
Add the coriander, cumin and red chilli powders
Add turmeric and garam masala powder
Toss in green peas and fry for 1 min.
then,  add tomatoes( alternatively you can puree the blanched tomatoes and add to the pan )
Cook until the oil leaves from the sides.

Now add the chopped potatoes and stir gently so that potatoes do not fall apart
 For extra creaminess and sweetness you can either add whole milk or cream and cook for 5 more min
and serve hot...
